Classic Crème Brûlée

Crème brûlée, a classic French dessert that is rich and creamy with a crisp caramelized top layer, is a perfect way to end a meal. In this recipe, we will show you how to make the perfect crème brûlée.

Ingredients:

  • 1 1/2 cups heavy cream
  • 1/2 cup milk
  • 1/2 cup granulated sugar, plus extra for caramelizing
  • 6 egg yolks
  • 1 teaspoon vanilla extract
  • Pinch of salt

Instructions:

  1. Preheat the oven to 325°F.

  2. In a medium saucepan, combine the heavy cream, milk, and 1/2 cup of sugar. Heat the mixture over medium heat, stirring occasionally, until the sugar dissolves and the mixture just begins to steam. Do not let it boil.

  3. In a mixing bowl, whisk together the egg yolks, vanilla extract, and salt.

  4. Slowly pour the hot cream mixture into the egg yolk mixture, whisking constantly until well combined.

  5. Strain the mixture through a fine-mesh sieve into a large measuring cup or bowl. This will remove any lumps or bits of cooked egg.

  6. Divide the mixture among six 6-ounce ramekins or custard cups.

  7. Place the ramekins in a baking dish and fill the dish with enough hot water to reach halfway up the sides of the ramekins.

  8. Bake for 30-35 minutes, or until the custards are set but still slightly jiggly in the center.

  9. Remove the ramekins from the water bath and let them cool to room temperature.

  10. Cover the ramekins with plastic wrap and refrigerate for at least 2 hours or overnight.

  11. When ready to serve, sprinkle a thin layer of granulated sugar over the top of each custard.

  12. Use a kitchen torch to caramelize the sugar until it is golden brown and crisp. If you don't have a kitchen torch, place the ramekins under the broiler for a few minutes, keeping a close eye on them to prevent burning.

  13. Serve immediately and enjoy the creamy, caramelized goodness of this classic French dessert.
