Ingredients:
For the crust:
- 2 cups graham cracker crumbs
- 1/3 cup granulated sugar
- 1/2 cup unsalted butter, melted
For the filling:
- 32 oz cream cheese, softened
- 1 1/4 cups granulated sugar
- 3 tbsp all-purpose flour
- 4 large eggs
- 2 tsp vanilla extract
Instructions:
- Preheat your oven to 325°F (160°C).
- In a large mixing bowl, combine the graham cracker crumbs, 1/3 cup of granulated sugar, and melted butter. Mix everything together until the crumbs are evenly coated.
- Press the mixture into the bottom and up the sides of a 9-inch springform pan. Make sure the crust is compact and even. Place the pan in the fridge to chill while you prepare the filling.
- In a large mixing bowl, beat the cream cheese until smooth and creamy. Add 1 1/4 cups of granulated sugar and 3 tbsp of flour, and beat until everything is well combined.
- Add the eggs, one at a time, and beat until each egg is fully incorporated before adding the next. Stir in the vanilla extract.
- Pour the cheesecake filling into the prepared crust. Tap the pan gently on the countertop to release any air bubbles.
- Bake the cheesecake in the preheated oven for 60-70 minutes, or until the edges are set but the center is still slightly jiggly.
- Turn off the oven and crack the door open. Let the cheesecake cool in the oven for 30 minutes.
- Remove the cheesecake from the oven and let it cool to room temperature. Chill in the fridge for at least 4 hours, or overnight.
- When ready to serve, remove the sides of the springform pan and slice the cheesecake into wedges.
