While the market for plant-based protein is booming, there is still something important missing: the fat. Swedish foodtech startup Melt&Marble decided to do something about that. From their research at Chalmers in Gothenburg, they realized that they could create animal fat from fermented yeast – without the animals. Now they are scaling up their business model, partnering with food companies that need to add that extra juicyness and flavor to their plant-based products.
