The Honey Oolong is an experimental bug-bitten oolong tea from Rohini Tea Estate in Darjeeling, India. Using a Taiwanese processing technique, tiny insects called tea jassids are encouraged to nibble on the leaves. The additional breakage in cellular material causes the tea leaves to release terpenes, yielding a sweet and honey-like taste. The resulting tea formed from a combination of rich Himalayan soil and careful processing is elegantly ethereal and floral. It is full bodied and bursting with nuanced meadow-y flavors.
