Homebrewing beer. In this episode of Brew Strong Jamil and John discuss some of the latest information on Hop Oils, Hop Bitterness, and Dry Hopping. Bitterness is now known to be composed of not just isomerized alpha acid, but also oxidized alpha and beta acids, and polyphenols. Hop oils continue to be heavily researched topic but the latest information indicates that dry hop aroma intensity is not correlated to total hop oil content (weight) in the hops.
