The employment market is a constant stress: where are the workers? Can Melbourne have the restaurants we pride ourselves on when there aren't enough people to work in them? Joe also makes an impassioned plea for people who don't love the industry to get out and leave it to the true believers. Also, I admit to being very, very tired.
