When he launched Timbre in Tasmania in 2016, Matt Adams told nearby backyard growers that he’d exchange their excess produce for dining vouchers. Without any kind of strategy or a plan, that’s turned into a restaurant that is fed by and feeds community, upending its owner’s notions about what a food business actually is. How does it work?
