We continue to ponder staffing in a great discussion with veteran Brisbane chef and restaurateur Shannon Kellam. Shannon and his wife Clare own French restaurant Montrachet as well as Lumiere Culinary Studio and The Kneadery bakeries. Though he has old-school values, Shannon has needed to innovate, creating a production kitchen to manage his chefs' hours and maintain his high standards.
