Rasmus Kofoed, chef owner of three-Michelin-starred Restaurant Geranium in Copenhagen, talks about Angelika - a totally plant-based restaurant located in the inspirational kitchen and private dining room of Geranium. He also talks about his experiences during lockdown, how he came up with the dishes and what he thinks of the future. Angelika is a pop-up restaurant, serving a tasting menu during lunch this summer.
